An interactive virtual ride at DisneyQuest based loosely on the Disneyland attraction Jungle Cruise.

I have considered this. I was just thinking of the possibility that there may be something to dump. But, as you said, there's really no way to know unless schematics or something fall into the hands of the public.

A DisneyQuest attraction where visitors design a virtual roller coaster, and then ride it via a simulator that tilts and even turns upside down. I've actually done this one.

By the way, the arcade system is listed as "Chihiro?" but I think one of the pages I linked to says it uses the same one as Dragon Chronicle, which is Namco System 246.

No relation to the 1984 Nintendo Entertainment System game other than the western shooter theme and being its namesake. This is a light gun shooter that uses 16mm film instead of electronic video, but runs on some sort of computer.

One of those huge coin pushers that can fit up to 24 players. It isn't just a coin pusher, it has video gameplay as well.

This one used 16mm film rather than video, but it was apparently controlled via a computer, so there might be something to dump (provided any hardware for it has survived and still exists). Played in former bowling alleys on the entire wall, rather than in a cabinet. Cabinet sized versions were made later under the name "Mini Laser Clay," but this may be an arcade system rather than actual cabinet sized versions of this actual game.

A bizarre game built into urinals that you play by, well, peeing.

Undumped Wiki / Idol Game (2002, Namco)

Apparently, back in 2002, Namco did a test run of a game called "Idol Game" (アイドルゲーム). It was a prototype to the much more well-known THE iDOLM@STER, released in 2005 (which reminds me, I don't think THE iDOLM@STER is dumped either). I've never played any of the games, so I'm no expert, but apparently, some of the idols were either renamed or removed completely from prototype to official, though the girls that were removed were reintroduced in later games.
